Seared Tuna Tacos ( ala Trader Joe’s)

Tacos are almost the perfect vehicle for any type of meal: cheap, healthy, flavorful, creative and even all of the above at the same time! These tacos can be made from things almost entirely found at Trader Joe’s, which makes the shopping part of this recipe even easier. The flavors are bold ad the cooking is simple, but bold if you’re giving tuna or fish a try for the first time. In short this is a healthy way to spice up your next Taco Tuesday or gathering with friends!

 

Ingredients

  • Tuna Filets
  • Avocados (or guacomole)
  • Jackfruit
  • Red onion
  • Sir Kensington’s Sriracha Aioli
  • Cabbage mix
  • Cilantro
  • Roasted red peppers
  • Lime juice
  • Taco/Tortilla shells

 

Directions

  1. Sautee diced jackfruit, julienne red onion, and roasted red peppers in medium pan over medium heat
  2. Mash avocados in a bowl with diced red onion, cilantro, lime juice and cilantro (or buy guacamole)
  3. In a separate bowl mix shredded cabbage with Sriracha aioli until well coated
  4. Heat a separate pan with oil over high heat
  5. Pat dry and salt & pepper tuna filets
  6. Place tuna filets in pan with hot oil and sear each side for 25 seconds until skin is crispy.
  7. Carefully remove tuna an slice into thin strips
  8. Fill tortillas with fruit and vegetable sautee, top with tuna, guacamole and spicy slaw.
